A little late to this, but if you want to do this with an easy to use GUI program, I did it in MP3tag. It's free on Windows and I believe also runs under WINE on Linux. Just open the folder with your library, select all the tracks, right on the album art area on the left and choose "Remove Cover".

I also tried using beets at first and agree that the program is just a little too complicated and involved for me. MP3Tag can do most of what it does and it's a little easier to see and fully understand what you are doing.
